So large is the Brick 90 outdoor brick pizza oven, in under two minutes, it is capable of creating six large pizzas with delicious yet difficult to achieve crisp, bubbled bases with chargrilled tinged toppings.
Built entirely by hand, by artisan craftsmen, from one piece of Castilian fire clay, our largest brick pizza oven has a capacious 850mm internal diameter and is substantially built, weighing 1000kg. Yet it is ready to cook pizza just 20 minutes from being lit.

Built by expert Spanish artisans
10 years is the length of time it takes to become a true master in the art of wood oven dome shaping by hand. This is how long artisan craftsmen who create each Fuego brick pizza oven have taken to perfect their technique. Once hand-shaped it dries naturally and is then baked for 24 hours at 1000℃.But that is only half the story.
The clay itself used to make each wood burning oven dome is a very special fire clay peculiar to the Castile region of Spain which has been used since Roman times. It has incredible heat resistance and refractory qualities compared to normal clay and, in the hands of an experienced craftsman, is capable of creating a brick oven that can retain its heat for longer than any other wood pizza oven. In fact, it heats up in half the time of other ovens and can go for several hours without adding any fuel and still be hot enough to cook.
Have it entirely your way
Each Fuego Brick oven is completely bespoke, from start to finish. You specify everything. You select the size, the type of finish, such as terracotta brick in the case of this Brick 90 oven. Then, you can add either a standard door or one with a window. There are different chimney options too and also a whole range of traditional Spanish wood oven accessories proven over years to make a genuine difference to your cooking.

The Brick 90 brick oven isn’t limited to turning out half a dozen perfectly cooked pizzas every couple of minutes. It offers so much more. It achieves superb results when roasting, baking, barbecuing, pan cooking, smoking and even slow cooking – all with that wonderful taste and aroma that you only get from cooking with a wood fired oven.
The Brick 90 wood-fired oven is set over a steel reinforced concrete base measuring 1200mm wide x 1200mm deep and 70mm thick, with steel eye bolts set over each corner for ease of lifting and positioning.
Height and Weight
The Brick 90 wood-fired oven has an overal height of 810mm and weighs 1000kg.
The Brick 90 wood-fired oven has a 800mm diameter internal cooking floor. Unlike other wood fired ovens that use cooking tiles inside the oven, the entire floor inside the Brick 90 oven is flat and can be utilised for cooking.
The Brick 90’s oven dome is made entirely from a single piece of Spanish fire clay, known for its refractory qualities for thousands of years, meaning excellent heat retention. This special fire clay stores heat for longer, ensuring crispy pizza bases and excellent cooking ability for hours on end. Due to the dense and insulating materials used in the Brick 90, the oven can be used in its core form, without the need for extra insulation and building works.
The Brick 90’s oven flue is placed outside the oven cooking chamber with a handle to open or close the flue vent. The diameter of the oven flue is 125mm. This smart design means that when the door is closed, and the flue vent is shut off, the oven will provide maximum heat retention, low wood consumption and especially useful for baking and other cooking techniques in a wood fired oven. Ovens with centralised flue vents in the oven dome result in sub-standard heat retention and higher fuel consumptions. Please note all flues, flue vents, handles and oven doors arrive in a matte black stove paint finish.
Every oven comes with a precision thermometer dial, which can heat up to 500℃. The oven flue vent, cast iron door vent and thermometer dial will allow you to control and regulate your oven’s cooking temperature.
